Even with the Merlot variety, we stick to the old Vipava methods when processing and nourishing wine. The essence of good wine is the vineyard and everything related to it. The basement is just a place of peace where wine matures with must. The paradox is that the smaller the presence of a cellar, the more clean and the perfect wine ripens. In the vineyard, however, there is a real opposite. The vine needs a lot of sun, and a little shade.
