The taste of the wine is something special because, unlike ordinary (non-mermaid) rebula, orange wine uses a longer (14-day) maceration, below the controlled temperature. Maceration means contact with strawberry, seeds and strawberry meat for a certain period of time. During this time, fermentation with controlled temperature is carried out. The taste of the wine is a bit of a tier, as the wine develops a high tannin content during the maceration, while at the same time the wine is fresh and lively, which is typical of the Rebula variety.
