Description
Jakot is a varietal white wine, which is better known from the past under the name of the Friulian tokaj. The must for this wine begins to ferment without cooling, with a two -day maceration. The fermentation continues and ends in a large wooden barrel. The wine is then laid down in this barrel for one year on its own lees, without flow. The first flow is carried out after one year before harvesting in the stainless steel tank, where it only cleans itself and stabilizes for another year so that it can be bottled without filtration after two years of ripening in the basement.
