Because we wanted to create a new quality, a new wine style, at the big white we decided to mix grapes (or must, when they were still during boiling), not already made wines. In this way, we get a real new wine, which does not seem to be one variety more standing out than the other than the custom of mixing wines already built. By mixing the grapes or musts during the boiling, we got the basic wine, which is only ripe for finalization after three years of ripening, when pure varieties are added to maintenance. We chose the following varieties: o Rebula, which is the spine of wine and strongly shows that much white comes from Brda, from our cellar;o Gray pinot, which, despite its fruit, is a bearer of elegance;o Sauvignon that raises wine aromatism.
