In the basement of Mervic - JNK we cultivate 3.5 hectares of vineyards that grow on beautiful soil at a height of 100 to 300 meters above sea level.The vineyards lie on 30-45% inclined soil, which gives us very good results in obtaining wine, aroma and acidity.Due to the special marlasy soil (seas), the wines contain many minerals.We produce mostly types of white wine - rebula, chardonnay, green sauvignon (jakot.e), white pinot, some Malvasia and Sauvignon.We produce cabernet sauvignon and merlot from red varieties.We are involved in the system of integrated grape and wine production in the authorized organization in Slovenia.Due to such production, we have a smaller crop on the vine (about 1.5 to 2 kg for white varieties and 2 kg in red varieties). The grapes at the harvest are carefully selected.First we separate the grapes, followed by maceration (boiling wine on a berry mass).The maceration of white grapes usually takes 3-5 days, sometimes up to 8, while red grapes macerate for about 30-40 days.The wine matures in wooden oak barrels where it lies 1-2 years.They mature on their own wine lees, which must be healthy when harvested so that we can choose to use them.With this type of production, we want to obtain wine suitable for aging, which means that we start selling our bottled wine after 3-4 years or more.In the meantime, the wine lies in bottles for at least one year after bottling. Our philosophy of wine production is the production of quality grapes, which is required to produce top quality wines of protected geographical origin.
