Kabaj, an award-winning winery located in Dobrovo, Slovenia, is renowned for its unique approach to viticulture, combining traditional Georgian Qvevri methods with a deep understanding of the individuality of the vine. At the helm is Jean Michel Morel, a Parisian who perfected his craft by training at some of the most prestigious wine estates in France before marrying Katja Kabaj and moving to Goriška Brda Dobrova. Their partnership transformed the Kabaj estate, focusing on bottling their own wines rather than selling the grapes. This decision placed Kabaj wines among the elite wines, which is recognized by Wine & Spirits magazine, which ranked Kabaj wines among the Top 100 wineries.

Morel's philosophy is that to make great wine, one must first understand the vine as a living entity, with its own heart and soul. This belief has led him to produce a range of skin-contact white wines since 1993, enhancing their body and tannins. Skin-contact white wines, they ferment with the grape skins, which give wine its color. Depending on how long the juice ferments with the skins—anywhere from a few hours to many months—skin-contact wines can range in color from golden-straw yellow to vibrant amber to Tony the Tiger orange. The lineup includes varietals such as Rebula, Sivi Pinot (Pinot Grigio), Sauvignon Blanc, Tocai Friulano, Beli Pinot (Pinot Blanc), and Chardonnay. A standout in their production is the Anfora white blend, macerated for 12 months in Georgian qveri, showcasing Morel's commitment to orange wine production since 2008.

Kabaj is particularly celebrated for its Ribolla Giallo (Rebula), the "White Queen of the Brda", a grape that reflects Morel's own journey from Greece, through Italy, and finally to Slovenia. The estate's wines, characterized by longer maceration and aging in oak, are only matured when Morel considers them ready for use.

Their red wines are described as earthy, bold, yet elegant, and as whites ones are sold all over the world, further cementing Kabaj's role in putting Slovenian wines on the global map.
